If my fussiest of fussy eaters approves of these then they must be good! A great way to sneak in veggies for the kids and you!
These are lunchbox friendly too. x
1 cup of spelt flour
1/2 cup oat flour - you can use any combo of flour. I’m loving this combo so sticking with it for now.
1 teaspoon baking powder
Good pinch of salt
2 tablespoons cocoa or cacao powder
2 whisked eggs
3/4-1 cup pureed cooked beetroot - approx 2 beetroot heads
3 tablespoons ghee/butter or EV olive oil.
1/2 cup agave/honey/maple syrup
1 block dark chocolate - I like to use Lindt 70%
1/2 tablespoon coconut oil
Combine dry ingredients in a bowl and give a good mix.
Combine wet ingredients in a separate bowl and add to dry ingredients. Add in pureed beetroot. Add in 1/2 cup first and combine. I would wait to add in melted chocolate to see what the colour of the batter looks like before adding in the remainder of pureed beetroot.
I melt my chocolate in a glass bowl with the coconut oil and microwave for a minute. Give a good stir then microwave in 30 second incriments until melted. If melting chocolate over the stove, omit the coconut oil.
Add melted chocolate to brownie batter and combine. I like to add in a few tablespoons of warm water to loosen the batter. Add in extra beetroot if needed.
Grease a shallow pan with olive oil or baking paper and add in brownie mixture.
Bake for 35 minutes at 180 degrees. Test if cooked with a skewer.
Allow to cool in pan for 10 minutes before flipping on a wire rack.

Wash beetroots before individually wrapping in foil - bake for 45 min (180 degrees) or until beetroots are soft. Roast extra for salads!
Remove the skin before pureeing beetroots in a mixer for 90 seconds.
As mentioned above, depending on the size of your beetroots I would only add in half a cup of pureed beetroot to batter, after mixing in melted chocolate you could slowly add the remainder if needed.
If batter is looking too red add more chocolate or cocoa.
