Baked Rice & Baked Macaroni

Growing up in a Maltese household, these two delicious meals were a family staple for us. Every Sunday we would visit my grandparents for lunch and my Nanna would cook the most delicious baked macaroni, we would all fight over the delicious crunchy macaroni bits on the top! I use my leftover vege packed bolognese (you can find the recipe here on my blog).

Serves 4-6

Ingredients

500grams Bolognese sauce

250g cooked brown rice or macaroni par boiled (I use rigatoni pasta)

1/2 cup grated parmesan or pecorino

3 eggs whisked

salt & pepper


Method:

If rice/macaroni is hot, allow to cool so eggs don’t scramble.

Combine all ingredients well in a bowl.

Pour into a well greased pan, sprinkle parmesan on top and bake for 35-40 minutes in a 180 degree oven.

Cook until firm and brown on top.

I like to serve with a mixed green salad. and a good sprinkle of sea salt.

Recipe notes

For a healthier version you could use turkey mince in bolognese sauce.

Both recipes are freezer friendly.

Tastes great cold.
